The people use to eat animals raw (with the blood) and that is why God gave them the sacrifice ritual to clean the meat and drain the blood and to cook the meat which is better then carnal and unclean humans eating raw animal meat.
God gave humanity plenty of fruits and grains and vegetation to eat - but people were brutal sinners who craved blood and guts into their bellies.
The animal sacrifices (cooking the meat) was not what God wanted = "
For I desired mercy, and not sacrifice; and the knowledge of God more than burnt offerings. " Hosea 6:6
It is true that God gave permission for humans as sinners to eat animals
Quran does not mention that humans are sinners by birth, every human is born innocent and remains as such until one disobeys the commandment of One-True-God. Since God has permitted meat of certain animals that are not violent so eating meat of such animals is not a sin:
[5:2] O ye who believe! fulfil your compacts. Lawful are made to you quadrupeds of the classof cattle other than those which are being announced to you, except that you should not hold game to be lawful while you are in a state of pilgrimage; verily, Allah decrees what He wills.
[5:3] O ye who believe! profane not the Signs of Allah, nor the Sacred Month, nor the animals brought as an offering, nor the animals of sacrifice wearing collars, nor those repairing to the Sacred House, seeking grace from their Lord, and His pleasure. And when you put off the pilgrims’ garb and are clear of the Sacred Territory, you may hunt. And let not the enmity of a people, that they hindered you from the Sacred Mosque, incite you to transgress. And help one another in righteousness and piety; but help not one another in sin and transgression. And fear Allah; surely, Allah is severe in punishment.
[5:4] Forbidden to you is the flesh of an animal which dies of itself, and blood and the flesh of swine; and that on which is invoked the name of one other than Allah; and that which has been strangled; and that beaten to death; and that killed by a fall; and that which has been gored to death; and that of which a wild animal has eaten, except that which you have properly slaughtered; and that which has been slaughtered at an altar. And forbidden is alsothat you seek to know your lot by the divining arrows. That is an act of disobedience. This day have those who disbelieve despaired of harming your religion. So fear them not, but fear Me. This day have I perfected your religion for you and completed My favour upon you and have chosen for you Islam as religion. But whoso is forced by hunger, without being wilfully inclined to sin, then, surely, Allah is Most Forgiving, Merciful.
[5:5] They ask thee what is made lawful for them. Say, ‘All good things have been made lawful for you; and what you have taught the beasts and birds of prey to catch for you, training them for hunting and teaching them of what Allah has taught you. So eat of that which they catch for you, and pronounce thereon the name of Allah. And fear Allah. Surely, Allah is quick in reckoning.’

So, there is no sin in eating meat of the animals for whose meat God has Himself given permission. Right, please?
But it is not a compulsion on one to eat meat, one could eat fruits and vegetable if one likes. Right, please?
