I see at places like http://atheistdiscussion.com that the atheists there like to pigeon hole islam quite a bit. Do you think this is right? Should they not be picking on all religions?

They can say whatever they want, surely their sins will be accounted for.
Do the people think that they will be left to say, "We believe" without being put to the test?

Now there are many different religions, every one of them differ in various ways.
However, if a deity does exist, only one of these religions can be right. You with me? Its simple logic, because i doubt 2 seperate religions will be right, most likely they will contradict each other in a way.
So lets say there is 1000 different religions, and only 1 can be right, thats 'if' a deity exists.
So how will we know if this deity exist? You must examine the source of the religion from an unbiased perspective and look for SCIENCE and SIGNS.

Now, part of the whole thing with 'signs' is that often it is vague, or retrofitting things after the fact. I think we have a different perspective on the meaning of vague.
The science of modern cosmology, observational and theoretical, clearly indicates that, at one point in time, the whole universe was nothing but a cloud of 'smoke' (i.e. an opaque highly dense and hot gaseous composition). This is one of the undisputed principles of standard modern cosmology. Scientists now can observe new stars forming out of the remnants of that 'smoke'. The illuminating stars we see at night were, just as was the whole universe, in that 'smoke' material. God said in the Quran:
Then He turned to the heavens when it was smoke... [Noble Quran 41:11]
Because the earth and the heavens above (the sun, moon, stars, planets, galaxies, etc.) have been formed from this same 'smoke' we conclude that the earth and the heavens were one connected entity. Then out of this homogeneous 'smoke', they formed and separated from each other. God said in the Quran:
Have not those who disbelieved known that the heavens and the earth were one connected entity, then We separated them?..
[Noble Quran 21:30]
